Yep, I forgot to post the recipe for last week's cookies but the cookies were in the cookie stand at the store and since we had to refill it halfway through the week, I know you loved them! Here is a link for Chocolate Chip and Toffee Bits Cookies (from the Nestle Cookie Recipe book!)
Now, time for this week's cookies! These are really yummy and those of you who love chocolate with a bit of mint will love these tasty bites!
Chocolate Mint Chippers (from- the folks at Gooseberry Patch and shame on you if you don't have at least FIVE of these cookbooks!)
3/4 c. butter flavored shortening
1/2 c. sugar
1/2 c. brown sugar, packed
1 egg
1 t. vanilla extract
1 t. peppermint extract
2 1/4 c. flour
1/4 c. baking cocoa
1 t. baking soda
1/4 t. salt
1 c. semi-sweet chocolate chips
Blend together butter, sugar and brown sugar in a large bowl until light and fluffy. Beat in egg. Stir in extracts; set aside. Combine flour, cocoa, baking soda and salt; gradually stir into butter mixture. Stir in chocolate chips. Drop by tablespoonfuls onto lightly greased baking sheets. Bake at 350 degrees for 12 to 15 minutes. Cool on baking sheets for 5 minutes before removing to wire rack. Makes about 2 1/2 dozen cookies.
